Description
A hearty and nutritious soup made with canned black-eyed peas.
Ingredients

- 2 cans black-eyed peas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat a pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until vegetables are soft.
- Add black-eyed peas, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper. Serve hot.
Notes
- For extra flavor, add a splash of hot sauce.
- This soup can be made ahead and stored in the refrigerator.
- Serve with crusty bread for a complete meal.
