Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Soak black-eyed peas in water overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add peas, water, bay leaf, salt, pepper, and cumin.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  7. Remove bay leaf before serving.

Notes

  • Serve with rice or cornbread.
  • Beans can be cooked in a slow cooker for 6-8 hours on low.
