Ingredients

- 1 lb shrimp, peeled and deveined
- 2 cups cooked rice
- 1 cup bell peppers, chopped
- 1 cup onion, chopped
- 1 cup celery, chopped

- 2 cups chicken broth
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup green onions, sliced
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add andouille sausage and cook until browned.
- Add bell peppers, onion, celery, and garlic. Sauté until soft.
- Stir in shrimp and cook until pink.
- Add cooked rice, chicken broth, and Cajun seasoning. Mix well.
- Simmer for 10 minutes, stirring occasionally.
- Garnish with green onions before serving.
Notes
- This dish can be made a day ahead and reheated.
- Adjust the spice level by varying the Cajun seasoning.
