Description
A hearty dish of Cajun black-eyed peas with spices.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 1 teaspoon Cajun seasoning
- 1 bay leaf
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, bell pepper, and celery; sauté until soft.
- Add soaked peas, water, Cajun seasoning, bay leaf, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove bay leaf and serve hot.
Notes
- Adjust seasoning according to your taste.
- For a spicier dish, add cayenne pepper.
- Serve with rice or cornbread.
