Instructions
- Heat olive oil in a large pot over medium heat.

- Add vegetable broth, diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Blend the soup for a smoother texture, if desired.
