A simple and delicious buckeyes recipe for chocolate-covered peanut butter balls.

- 1 cup peanut butter
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semisweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix peanut butter and softened butter until smooth.
- Add powdered sugar and vanilla extract. Mix until combined.
- Form the mixture into small balls and place on a baking sheet.
- Freeze for 30 minutes until firm.
- Melt chocolate chips and vegetable oil in a microwave or double boiler.
- Dip each ball into the chocolate, covering it completely.
- Return to the baking sheet and let the chocolate set.
- Store in the refrigerator until ready to serve.
Notes
- Use natural peanut butter for best flavor.
- Make sure the balls are firm before dipping.
