Description
Buckeyes are delicious chocolate-covered peanut butter balls.
Ingredients

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix peanut butter, butter, and vanilla until smooth.
- Add powdered sugar gradually, mixing until combined.
- Shape the mixture into small balls and place on a baking sheet.
- Freeze the balls for about 30 minutes.
- Melt chocolate chips and vegetable oil together in a microwave or double boiler.
- Dip each ball into the chocolate, covering it except for a small portion on top.
- Place back on the baking sheet and let the chocolate set.
Notes
- Store in an airtight container in the refrigerator.
- For a richer chocolate flavor, use dark chocolate.
- You can substitute almond butter for a different taste.
