Buckeyes cookies are a delicious treat made of peanut butter and chocolate.
Ingredients

- 1 cup peanut butter
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions
- In a bowl, mix peanut butter and softened butter until smooth.
- Add powdered sugar and vanilla extract, mix until combined.
- Roll the mixture into small balls and place on a baking sheet.
- Chill in the refrigerator for 30 minutes.
- Melt chocolate chips and vegetable oil in a bowl over hot water.
- Dip each peanut butter ball into the chocolate, covering half.
- Return to the baking sheet and chill until the chocolate hardens.
Notes
- Store in an airtight container.
- Can substitute almond butter for peanut butter.
- Use dark chocolate for a richer flavor.
