- 1 boneless ribeye roast (4–6 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Combine olive oil, garlic, salt, pepper, rosemary, and thyme in a bowl.
- Rub the mixture all over the ribeye roast.
- Place the roast on a rack in a roasting pan.
- Roast for 15 minutes, then lower the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from the oven and let it rest for 15-20 minutes before slicing.
