  • Fresh rosemary – 2 sprigs

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the ribeye roast dry with paper towels.
  3. Rub the roast with olive oil, salt, black pepper, and garlic powder.
  4. Place the fresh rosemary on top of the roast.
  5. Place the roast on a rack in a roasting pan.
  6. Roast for 20 minutes, then reduce the temperature to 325°F (163°C).
  7. Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
  8. Remove from the oven and let it rest for 15-20 minutes before slicing.
