Ingredients
- Bone-in ribeye roast – 5 pounds
- Salt – 2 tablespoons
- Black pepper – 1 tablespoon
- Garlic powder – 1 tablespoon
- Olive oil – 2 tablespoons
- Fresh rosemary – 2 sprigs
Instructions
- Preheat your oven to 450°F (232°C).
- Pat the ribeye roast dry with paper towels.
- Rub the roast with olive oil, salt, black pepper, and garlic powder.
- Place the fresh rosemary on top of the roast.
- Place the roast on a rack in a roasting pan.
- Roast for 20 minutes, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from the oven and let it rest for 15-20 minutes before slicing.
