Ingredients

- 2 cups mixed dried fruits
- 1 cup water
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup chopped nuts
Instructions
- Boil the mixed dried fruits with water for 10 minutes.
- Remove from heat and let it cool.
- In a bowl, mix brown sugar and butter until well combined.
- Add eggs to the mixture and stir well.
- In another bowl, combine flour, baking powder, spices, and salt.
- Add the flour mixture to the wet ingredients and mix until smooth.
- Fold in the boiled fruit and nuts.
- Pour batter into a greased cake pan.
- Bake at 325°F (160°C) for 50-60 minutes.
- Let the cake cool before serving.
Notes
- Store in an airtight container for up to a week.
- Can be served with cream or custard.
- For added flavor, soak fruits overnight in rum or juice.
