Ingredients

- 1 cup black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add soaked black-eyed peas, water, cumin, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Check for tenderness and adjust seasoning as needed.
- Serve hot.
Notes
- For extra flavor, add smoked sausage or ham.
- Serve with rice or cornbread.
- Store leftovers in an airtight container in the fridge.
