Description

Ingredients

- 2 cups black eyed peas
- 1 pound salt pork, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups water
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
Instructions
- Rinse black eyed peas and soak them for at least 4 hours.
- In a large pot, add diced salt pork and cook until browned.
- Add chopped onion and minced garlic, sauté until soft.
- Add soaked peas, water, black pepper, and cayenne pepper to the pot.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Stir occasionally and add more water if needed.
- Check for tenderness, cook longer if necessary.
- Serve hot.
