Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1 bay leaf
  • Optional: diced ham or bacon for flavor

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a pot, add the peas and water, and bring to a boil.
  3. Add onion, garlic, salt, pepper, and bay leaf.
  4. If using, add diced ham or bacon.
  5. Reduce heat and simmer for 30-45 minutes until peas are tender.
  6. Remove the bay leaf before serving.

Notes

  • Soaking peas overnight can reduce cooking time.
  • Serve with cornbread for a complete meal.
