A traditional dish made with black-eyed peas, often served for good luck.
Ingredients

- 1 cup black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
- Optional: diced ham or bacon for flavor
Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, add the peas and water, and bring to a boil.
- Add onion, garlic, salt, pepper, and bay leaf.
- If using, add diced ham or bacon.
- Reduce heat and simmer for 30-45 minutes until peas are tender.
- Remove the bay leaf before serving.
Notes
- Soaking peas overnight can reduce cooking time.
- Serve with cornbread for a complete meal.
- Black-eyed peas are often eaten on New Year’s Day for good luck.
