Instructions
- Rinse and soak the black eyed peas overnight.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, carrot, and celery; sauté until softened.
- Add soaked black eyed peas, vegetable broth, diced tomatoes, and cumin.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper to taste.
- Serve hot.
