A simple and nutritious black eyed peas recipe that is vegetarian.
Ingredients

- 1 cup black eyed peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup spinach
Instructions
- Soak black eyed peas overnight and drain.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add cumin, salt, and pepper. Stir well.
- Add black eyed peas, vegetable broth, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add spinach and cook for an additional 5 minutes.
- Serve warm.
Notes
- Adjust spices according to your taste.
- Can substitute spinach with kale.
- For added flavor, include a dash of hot sauce.
