A quick and easy black-eyed peas recipe made in a pressure cooker.

- 1 cup black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- Heat olive oil in the pressure cooker.
- Add chopped onion and garlic; sauté until softened.
- Add black-eyed peas, water, salt, pepper, smoked paprika, and bay leaf.
- Seal the pressure cooker and cook on high for 10 minutes.
- Allow the pressure to release naturally for 10 minutes.
- Remove the bay leaf and serve.
Notes
- Soaking peas overnight can reduce cooking time.
- Adjust seasoning as per your taste.
