- 2 cups sliced okra
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Soak black eyed peas overnight.
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic; sauté until soft.
- Add okra and cook for 5 minutes.
- Add soaked black eyed peas, diced tomatoes, vegetable broth, salt, and pepper.
- Bring to a boil, then simmer for 30-40 minutes until peas are tender.
- Serve hot.
