Description
A simple and hearty dish made with black eyed peas cooked in a crock pot.
Ingredients

- 1 pound black eyed peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse and soak the black eyed peas overnight.
- In the crock pot, combine the soaked peas, onion, garlic, and bell pepper.
- Add the vegetable broth, cumin, paprika, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or until peas are tender.
- Serve warm.
