- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
- 1/2 teaspoon cayenne pepper (optional)
Instructions
- Rinse black-eyed peas under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic; sauté until soft.
- Add black-eyed peas, water, ham hock, salt, pepper, bay leaf, and cayenne pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour.
- Remove ham hock; shred meat and return to pot.
- Serve warm, enjoy your meal!
