Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1/2 teaspoon cayenne pepper (optional)

Instructions

  1. Rinse black-eyed peas under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion and garlic; sauté until soft.
  4. Add black-eyed peas, water, ham hock, salt, pepper, bay leaf, and cayenne pepper.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour.
  6. Remove ham hock; shred meat and return to pot.
  7. Serve warm, enjoy your meal!
