A nutritious and hearty dish made with black eyed peas.
Ingredients

- 1 cup black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 bay leaf
- 1 cup diced tomatoes
Instructions
- Soak the black eyed peas in water overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add black eyed peas, water, tomatoes, cumin, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the bay leaf before serving.
Notes
- Serve hot with rice or bread.
- Store leftovers in the fridge for up to 3 days.
- Can add greens for extra flavor.
