Ingredients

  • 1 cup black eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 bay leaf
  • 1 cup diced tomatoes

Instructions

  1. Soak the black eyed peas in water overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add black eyed peas, water, tomatoes, cumin, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Remove the bay leaf before serving.

  • Serve hot with rice or bread.
  • Store leftovers in the fridge for up to 3 days.
