Description
A simple and hearty black eyed peas dish cooked in a crockpot.
Ingredients

- 2 cups black eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
- 1 can diced tomatoes
- 1 bay leaf
- 1 cup diced carrots
Instructions
- Rinse black eyed peas and soak overnight.
- Drain and add peas to the crockpot.
- Add vegetable broth, onion, garlic, bell pepper, and diced tomatoes.
- Stir in cumin, paprika, salt, and pepper.
- Add carrots and bay leaf.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Remove bay leaf before serving.
Notes
- Adjust seasoning as preferred.
- Can add cooked meat for extra flavor.
- Store leftovers in the fridge for up to 3 days.
