Instructions

  1. Rinse black eyed peas and soak overnight.
  2. Drain and add peas to the crockpot.
  3. Add vegetable broth, onion, garlic, bell pepper, and diced tomatoes.
  4. Stir in cumin, paprika, salt, and pepper.
  5. Add carrots and bay leaf.
  6. Cover and cook on low for 6-8 hours or high for 4 hours.
  7. Remove bay leaf before serving.
