Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, combine the peas and water. Bring to a boil.
- Add salt and simmer for 30 minutes until tender.
- In a pan, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add cumin, paprika, and black pepper, stir for 1 minute.
- Combine the sautéed mixture with the drained peas. Stir well.
- Cook for an additional 5 minutes. Serve warm.
