A healthy and delicious black eyed peas and spinach recipe.


Ingredients

  • 1 cup black eyed peas, soaked overnight
  • 2 cups fresh spinach, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Drain and rinse the soaked black eyed peas.
  2. In a pot, heat olive oil over medium heat.
  3. Add diced onion and sauté until translucent.
  4. Add minced garlic and cumin, cook for 1 minute.
  5. Add black eyed peas and 4 cups of water.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add chopped spinach, salt, and pepper; stir well.
  8. Cook for an additional 5 minutes until spinach wilts.
  9. Serve warm.

Notes

  • Adjust seasoning as preferred.
  • Can add other vegetables for variety.
  • Store leftovers in the refrigerator for up to 3 days.
