A healthy and delicious black eyed peas and spinach recipe.
Ingredients

- 1 cup black eyed peas, soaked overnight
- 2 cups fresh spinach, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
Instructions
- Drain and rinse the soaked black eyed peas.
- In a pot, heat olive oil over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and cumin, cook for 1 minute.
- Add black eyed peas and 4 cups of water.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add chopped spinach, salt, and pepper; stir well.
- Cook for an additional 5 minutes until spinach wilts.
- Serve warm.
Notes
- Adjust seasoning as preferred.
- Can add other vegetables for variety.
- Store leftovers in the refrigerator for up to 3 days.
