Description
A hearty dish combining black eyed peas and rice.
Ingredients

- 1 cup black eyed peas
- 1 cup rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 2 tablespoons olive oil
Instructions
- Soak the black eyed peas overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Cook until soft.
- Add the black eyed peas, water, salt, pepper, and cumin.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add rice and stir well.
- Cover and cook for an additional 20 minutes or until rice is tender.
- Fluff with a fork and serve warm.
Notes
- Adjust seasoning to taste.
- Can add meat for extra flavor.
- Use vegetable broth instead of water for more depth.
