Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 2 tablespoons olive oil

Instructions

  1. Soak the black eyed peas overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion, garlic, and bell pepper. Cook until soft.
  5. Add the black eyed peas, water, salt, pepper, and cumin.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add rice and stir well.
  8. Cover and cook for an additional 20 minutes or until rice is tender.
  9. Fluff with a fork and serve warm.
