Ingredients

- 1 cup black-eyed peas
- 1 cup rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Rinse and soak black-eyed peas for at least 4 hours.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until soft.
- Add soaked black-eyed peas and water, bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add rice, salt, and pepper, stir well.
- Cover and cook for an additional 20 minutes or until rice is tender.
