Ingredients

  • 1 ham hock or 2 cups diced ham
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 bay leaf
  • 2 carrots, diced
  • 2 celery stalks, diced

Instructions

  1. Soak the black eyed peas overnight in water.
  2. Drain and rinse the peas.
  3. In a large pot, sauté onion and garlic until soft.
  4. Add ham hock, broth, carrots, celery, and peas.
  5. Season with black pepper, salt, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  7. Remove the ham hock, shred the meat, and return to the pot.
  8. Serve warm.
