Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups vegetable broth
  • 2 cups chopped collard greens
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Soak the black-eyed peas overnight.
  2. Drain and rinse the peas.
  3. In a large pot, heat olive oil over medium heat.
  4. Add onion and garlic; sauté until translucent.
  5. Add black-eyed peas, vegetable broth, cumin, and smoked paprika.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add collard greens and cook for an additional 15 minutes.
  8. Season with salt and pepper to taste.
