Ingredients

- 1 cup black-eyed peas, soaked
- 4 cups collard greens, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon red pepper flakes (optional)
Instructions
- Drain and rinse the soaked black-eyed peas.
- In a large pot, heat olive oil over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and sauté for another minute.
- Add black-eyed peas and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add chopped collard greens and season with salt, pepper, and red pepper flakes.
- Simmer for another 15-20 minutes until greens are tender.
- Serve warm.
Notes
- Feel free to substitute greens with spinach or kale.
- For a vegetarian version, ensure the broth is vegetable-based.
