  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Drain and rinse the soaked black-eyed peas.
  2. In a large pot, heat olive oil over medium heat.
  3. Add diced onion and sauté until translucent.
  4. Add minced garlic and sauté for another minute.
  5. Add black-eyed peas and vegetable broth to the pot.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add chopped collard greens and season with salt, pepper, and red pepper flakes.
  8. Simmer for another 15-20 minutes until greens are tender.
  9. Serve warm.
