Ingredients

  • 1 cup black eyed peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Soak the black eyed peas overnight.
  2. Drain and rinse the peas.
  3. In a large pot, sauté onion and garlic until soft.
  4. Add carrots and celery, cooking for another 5 minutes.
  5. Add black eyed peas, diced tomatoes, vegetable broth, and cumin.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Season with salt and pepper.
  8. Serve hot.
