A fresh and healthy black eyed pea salad tossed in Italian dressing.
Ingredients

- 1 can black eyed peas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup Italian dressing
Instructions
- Rinse and drain the black eyed peas.
- In a large bowl, combine black eyed peas, cherry tomatoes, cucumber, red onion, and parsley.
- Pour the Italian dressing over the salad.
- Toss everything together until well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
