Description
A refreshing black-eyed pea salad served with bread.
Ingredients

- 1 cup black-eyed peas, cooked

- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil

- 4 slices of bread
Instructions
- In a large bowl, combine black-eyed peas, onion, bell pepper, cherry tomatoes, and parsley.
- In a small bowl, whisk together olive oil, vinegar, salt, and black pepper.
- Pour the dressing over the salad and mix well.
- Toast the bread slices until golden brown.
- Serve the salad with toasted bread on the side.
Notes
- Chill the salad for 30 minutes before serving for enhanced flavor.
- Substitute bread with pita for a different texture.
