A refreshing black eyed pea salad that is easy to prepare.
Ingredients

- 1 can black eyed peas, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup bell pepper, diced
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine black eyed peas, cherry tomatoes, red onion, bell pepper, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss well to combine.
- Let the salad sit for at least 10 minutes before serving.
