Description
A refreshing black eyed pea salad known as cowboy caviar.
Ingredients

- 1 can black eyed peas, drained and rinsed
- 1 cup corn, canned or frozen
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeño, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine black eyed peas, corn, bell pepper, red onion, jalapeño, and cilantro.
- In a separate bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad ingredients.
- Toss to combine everything well.
- Let it sit for 30 minutes to allow flavors to meld.
Notes
- This salad can be served chilled or at room temperature.
- Adjust the spice level by adding more or less jalapeño.
- Great as a side dish or a light meal.
