Ingredients

- 2 cups black eyed peas, cooked
- 1 cup pasta, cooked
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Cook black eyed peas and pasta according to package instructions.
- In a large bowl, combine black eyed peas and pasta.
- Add cherry tomatoes, red onion, bell pepper, and parsley.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and mix well.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- This salad can be made a day in advance.
- Feel free to add your favorite vegetables.
- Store leftovers in the fridge for up to 3 days.
