Ingredients

- 2 cups cooked black-eyed peas
- 1 cup chopped greens (spinach, kale, or collard greens)
- 1/2 cup cornmeal
- 1/4 cup flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1/4 cup water
- Oil for frying
Instructions
- In a bowl, mash the black-eyed peas until mostly smooth.
- Add chopped greens, cornmeal, flour, onion, garlic, salt, peppers, and cumin.
- Mix well and add water to form a thick batter.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Drain on paper towels and serve hot.
Notes
- Use your choice of greens.
- Adjust spices to taste.
- These fritters can be baked for a healthier option.
