- 1/2 cup Italian dressing
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper
- 1/4 cup chopped fresh parsley
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the black-eyed peas, Italian dressing, red onion, bell pepper, and parsley.
- Add lemon juice, salt, and pepper. Mix well.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve with tortilla chips or fresh vegetables.
Notes
- Adjust the dressing quantity to taste.
- For a spicier dip, add chopped jalapeños.
- This dip can be made a day ahead for better flavor.
