A hearty and flavorful black eyed pea chili.
Ingredients

- 2 cups black eyed peas, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
Instructions
- Drain and rinse the soaked black eyed peas.
- In a large pot, sauté onion, garlic, and bell pepper until soft.
- Add black eyed peas, diced tomatoes, vegetable broth, chili powder, and cumin.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper to taste.
Notes
- Serve with cornbread.
- Can be stored in the fridge for up to 5 days.
- Suitable for freezing.
