Instructions

  1. Drain and rinse the soaked black eyed peas.
  2. In a large pot, sauté onion, garlic, and bell pepper until soft.
  3. Add black eyed peas, diced tomatoes, vegetable broth, chili powder, and cumin.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Season with salt and pepper to taste.
