- 2 cups birria meat, shredded
- 8 corn tortillas
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1 cup birria broth
- Oil for frying
Instructions
- Heat oil in a pan over medium heat.
- Soften tortillas in the pan for a few seconds on each side.
- Fill each tortilla with shredded birria meat, cheese, onions, and cilantro.
- Roll the tortillas and place them seam-side down in a baking dish.
- Pour birria broth over the enchiladas.
- Bake in a preheated oven at 350°F for 15 minutes.
- Serve hot with additional toppings if desired.
