A rich and creamy lobster bisque that is full of flavor.
Ingredients

- 2 lobsters (1.5 lbs each)
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup white wine
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Boil lobsters in salted water for 10 minutes.
- Remove meat from lobsters and chop into pieces.
- Sauté onion, carrots, celery, and garlic in a pot until soft.
- Add tomato paste, thyme, and bay leaf; cook for 2 minutes.
- Pour in white wine and simmer until reduced by half.
- Add seafood stock and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Blend the soup until smooth.
- Stir in heavy cream and lobster meat; heat through.
- Season with salt and pepper.
Notes
- Use fresh lobster for best flavor.
- Adjust thickness by adding more cream or stock.
- Garnish with fresh herbs before serving.
