Ingredients

  • 2 lobsters (1.5 lbs each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Boil lobsters in salted water for 10 minutes.
  2. Remove meat from lobsters and chop into pieces.
  3. Sauté onion, carrots, celery, and garlic in a pot until soft.
  4. Add tomato paste, thyme, and bay leaf; cook for 2 minutes.
  5. Pour in white wine and simmer until reduced by half.
  6. Add seafood stock and bring to a boil.
  7. Reduce heat and simmer for 30 minutes.
  8. Blend the soup until smooth.
  9. Stir in heavy cream and lobster meat; heat through.
  10. Season with salt and pepper.
