Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic, cooking until softened.
  5. Add carrots and potatoes, stirring to combine.
  6. Return beef to pot and add beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  8. Remove bay leaf before serving.
