Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic, cooking until softened.
- Add carrots and potatoes, stirring to combine.
- Return beef to pot and add beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove bay leaf before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This stew can be frozen for later use.
