Ingredients

- 5 lb beef ribeye roast
- 2 tsp salt
- 1 tsp black pepper
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions
- Preheat your oven to 450°F (232°C).
- Season the ribeye roast with salt and black pepper.
- Mix garlic and olive oil, then rub it over the roast.
- Place rosemary and thyme on top of the roast.
- Put the roast in the oven and cook for 20 minutes.
- Reduce temperature to 325°F (163°C) and cook for an additional 1.5 to 2 hours.
- Use a meat thermometer to check for desired doneness.
- Remove from oven and let it rest for 15 minutes before slicing.

- Adjust seasoning according to taste.
- Let the roast come to room temperature before cooking.
