Ingredients

  • 2 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Season the ribeye roast with salt and black pepper.
  3. Mix garlic and olive oil, then rub it over the roast.
  4. Place rosemary and thyme on top of the roast.
  5. Put the roast in the oven and cook for 20 minutes.
  6. Reduce temperature to 325°F (163°C) and cook for an additional 1.5 to 2 hours.
  7. Use a meat thermometer to check for desired doneness.
  8. Remove from oven and let it rest for 15 minutes before slicing.
