Description

A healthy banana bread made with wholemeal flour and dried fruit.


Ingredients

Scale
  • 3 ripe bananas
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups wholemeal flour
  • 1/2 cup mixed dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mash the bananas.
  3. Add sugar, melted butter, and vanilla extract. Mix well.
  4. Stir in baking soda and salt.
  5. Add wholemeal flour and mix until just combined.
  6. Fold in dried fruit.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.

Notes

  • Store leftovers in an airtight container.
  • Can substitute dried fruit with nuts.
  • Best served warm.
