A fresh and tangy balsamic potato salad.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped

Instructions

  1. Boil the potatoes until fork-tender, about 15 minutes.
  2. Drain and let cool slightly, then cut into halves.
  3. In a bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper.
  4. Add the potatoes to the dressing and toss to coat.
  5. Stir in cherry tomatoes and basil.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes
