Instructions
- Preheat your oven to 350°F (175°C).
- Drain and rinse the soaked black-eyed peas.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add black-eyed peas, salt, pepper, and paprika to the skillet.
- Pour in vegetable broth and bring to a boil.
- Transfer the mixture to a baking dish.
- Bake for 45 minutes or until peas are tender.
