Description
Traditional Australian Christmas food features a mix of summer dishes and festive favorites.
Ingredients

- 1 whole turkey, about 4–5 kg
- 200g butter, softened
- 2 cups breadcrumbs
- 1 cup cooked chestnuts, chopped
- 1 cup dried cranberries
- 1 cup fresh herbs, chopped (parsley, thyme)
- Salt and pepper to taste
- 1 kg fresh prawns, peeled and deveined
- 1 large watermelon, cut into wedges
- 1 pavlova base
- 500ml whipped cream
- 2 cups mixed berries
Instructions
- Preheat your oven to 180°C (350°F).
- Mix butter, breadcrumbs, chestnuts, cranberries, herbs, salt, and pepper in a bowl.
- Stuff the turkey with the mixture and place it in a roasting pan.
- Roast the turkey for about 3 hours, or until cooked through.
- While the turkey cooks, prepare prawns by boiling them for 2-3 minutes.
- Serve prawns with lemon wedges.
- Arrange watermelon wedges on a serving platter.
- Top pavlova with whipped cream and berries.
- Slice and serve all dishes together.

- Let the turkey rest before carving.
- Use fresh herbs for better flavor.
- Adjust seasoning according to taste.
