Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups chicken broth
  • 1 cup peanut butter
  • 1 can diced tomatoes
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 cups spinach, chopped

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Add chicken pieces and brown on all sides.
  4. Stir in cumin and paprika.
  5. Add chicken broth and tomatoes. Bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Stir in peanut butter until well combined.
  8. Add spinach and cook for an additional 5 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot.
