A simple and hearty African black-eyed peas recipe.
Ingredients

- 2 cups black-eyed peas
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 2 tablespoons olive oil
- 4 cups vegetable broth
Instructions
- Soak black-eyed peas overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add soaked peas, cumin, paprika, salt, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Serve warm.
