Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together butter and sugar until light and fluffy.
- Add egg, vanilla extract, lemon zest, and lemon juice. Mix well.
- In another bowl, combine flour, shredded coconut, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture. Mix until combined.
- Drop tablespoon-sized amounts of dough onto a baking sheet.
- Bake for 10-12 minutes or until the edges are golden.
- Remove from the oven and let cool on a wire rack.
