Crispy zucchini fritters that are easy to make and delicious.
Ingredients

- 2 medium zucchini, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup chopped green onions
- Oil for frying
Instructions
- Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes.
- Squeeze out excess moisture from the zucchini.
- In a bowl, combine zucchini, flour, eggs, Parmesan cheese, pepper, garlic powder, and green onions.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten slightly.
- Cook for 3-4 minutes on each side until golden brown.
- Remove and drain on paper towels.
Notes
- Serve with yogurt or sour cream.
- Store leftovers in the fridge for up to three days.
